WHITE MARSH, MD. — TIC Gums has introduced Ticaloid GR 5420, a blend of gums that replaces guar gum and offers a cost-effective alternative in baked foods such as cake, bread, bagels and muffins. A texture and stabilization formula, Ticaloid GR 5420 may be used in amounts of 2 oz to 5 oz per 100 lbs of flour.
“There is a bottleneck around the availability of guar gum,” TIC Gums, White Marsh, said. “The unprecedented increase in guar gum pricing and tight supply continues through the third quarter of 2011 and likely into 2012. TIC Gums provides formulas that are made to match the desired texture in a final product.”
