ST. LOUIS – ICL Performance Products LP has developed Licresse, a licorice extract that is high in antioxidants to break the chain of oxidation in a variety of foods, including meat, beverage, bakery and dairy applications.

“Antioxidants slow down oxidation that occurs when food is exposed to oxygen or sunlight,” said Nancy Stachiw, director-applications technology for St. Louis-based ICL Performance Products. “Licresse is naturally high in phenolic compounds, which have antioxidant activity. With this ingredient, food manufacturers can keep the nutritional value, color and flavor of food while also extending shelf life and palatability.”

ICL Performance Products will have samples of popcorn toppings with Licresse at its booth No. 2458 during the Institute of Food Technologists’ annual meeting and food exposition June 26-28 in Las Vegas.

BK Giulini’s booth No. 1385 will offer samples of meatballs with Licresse.
