WASHINGTON — August production of edible nonfat dry milk was 113,423,000 lbs, down 15% from 133,476,000 lbs in July and down 5% from 119,562,000 lbs in August 2010, the U.S. Department of Agriculture said in its latest Dairy Products report.

Manufacturers’ stocks of edible nonfat dry milk were 171,729,000 lbs, down 11% from 193,046,000 lbs in July but up 4% from 164,453,000 lbs in August 2010. August nonfat dry milk shipments were 124,738,000 lbs, down 2% from 126,805,000 lbs in July and down 17% from 149,312,000 lbs in August 2010.

Output of skim milk powders was 38,677,000 lbs, down 3% from 39,653,000 lbs in July but up 157% from 15,075,000 lbs a year earlier. Total dry whey production was 79,789,000 lbs in August, down 2% from 81,783,000 lbs in July and also down 2% from 81,519,000 lbs in August 2010. Production of lactose was 82,853,000 lbs, down 3% from 85,078,000 lbs in July but up 3% from 80,143,000 lbs in August 2010. Whey protein concentrate production totaled 35,566,000 lbs, up 2% from 34,927,000 lbs in July and up 1% from 35,142,000 lbs in August 2010. August dry buttermilk outturn was 6,550,000 lbs, down 5% from 6,902,000 lbs in July but up 26% from 5,201,000 lbs in August 2010.

Total manufacturers stocks of dry whey on Aug. 31, 2011, were 44,348,000 lbs, down 7% from 47,912,000 lbs in July and down 3% from 45,640,000 lbs in August 2010. Total lactose stocks were 68,220,000 lbs, down 11% from 76,038,000 lbs in July and down 20% from 84,934,000 lbs in August 2010. Whey protein concentrate stocks totaled 38,618,000 lbs, up 8% from 35,818,000 lbs in July and up 11% from 34,743,000 lbs in August 2010. Dry buttermilk stocks totaled 16,323,000 lbs, down 11% from 18,404,000 lbs in July but up 103% from 8,026,000 lbs in August 2010.

Butter production was 133,015,000 lbs in August, down 2% from 135,141,000 in July but up 31% from 101,518,000 lbs in August 2010.

Total cheese production in August was 868,087,000 lbs, up 2% from 855,414,000 lbs in July but down slightly from 870,703,000 lbs in August 2010.

Production of regular hard ice cream totaled 77,392,000 gallons, up 9% from 71,229,000 gallons in July and up 5% from 73,900,000 gallons in August 2010. Low-fat ice cream production was 40,902,000 gallons, down 2% from 41,888,000 gallons in July but up 8% from 37,745,000 gallons in August 2010.
