NORTHBROOK, ILL. — Bell Flavors & Fragrances predicts Korean cuisines will make a hit in the market in 2012 with Cajun and Greek following close behind. Also, salty caramel flavor will make the largest impact on all food and beverage products in 2012, according to the company’s top 10 flavors list, which has the theme “emerging cultures.”

The Northbrook-based company used three different processes to select the top flavors. They included tracking samples that have been requested over a 12-month period, trend scouting by Bell’s internal marketing and R.&D. departments worldwide, and tracking trends through external databases.

Bell Flavors & Fragrances also listed the top 10 fragrances under the theme “the wild luxury consumer.” Ginger orchid was the No. 1 fragrance.

The top 10 sweet flavors were salty caramel, red velvet, strawberry jasmine, cinnamon chipotle, eucalyptus, taro/sweet potato, roasted coconut, café de olla, Lucuma and white sesame.

The top 10 savory flavors were white truffle oil, kimchi, absinthe, calamansi lime, rich umami, rose water, aged cayenne pepper, Satsuma orange, mirin and romesco.

The top 10 beverage flavors were lemonade, maqui berry, aloe vera, white tea, mamey, cucumber mint, chrysanthemum, kumquat, honey ginger and green coconut.
