WASHINGTON — The total amount of edible liquid product from shell eggs broken during February was 215,756,000 lbs, down 3% from January but up 6% from February 2011, the U.S. Department of Agriculture said in its latest Egg Products report.

February production of edible liquid whole eggs were 129,016,000 lbs, down 4% from January but up 7% from February 2011; liquid whites were 57,432,000 lbs, down 1% from January but up 7% from February 2011; liquid yolks were 29,308,000 lbs, down 3% from January but up 2% from February 2011.
Shell eggs broken in February were 165,707,000 dozen, down 3% from January but up 7% from February 2011.

Due to leap year, February 2012 had one extra day than February 2011.

January – February production of edible whole eggs was 263,399,000 lbs, up 2% from the previous year; whites were 115,433,000 lbs, up 7%; yolks were 59,409,000 lbs, up 6%; and total edible liquid was 438,241,000 lbs, up 4%.
