MANNHATTAN, KAS. — AIB International now includes a profile for fruit-filled pastries in its catalog of baking process kill-step calculators. The device allows bakers to validate their food safety preventive controls and evaluate Salmonella destruction in bakery products. The Food and Drug Administration’s Food Safety Modernization Act requires validation and verification of thermal processes to ensure product safety.

Manhattan-based AIB International now has 10 kill-step calculators. The other calculators are for cheesecakes, flour tortillas, yeast-raised donuts, nut muffins, cake muffins, whole wheat multigrain bread, crisp cookies, soft cookies and hamburger buns.
