PASADENA, CALIF.  — Pak Group, through its North American brand Bellarise, has introduced Bellarise semi-dry yeast. The new line of yeast offers better shelf life for unfermented frozen dough (U.F.F.), more consistent gassing power from proof to bake when compared to cream and crumbled fresh yeast, and reduced costs, according to the Pasadena-based company.

The yeast, which is non-bioengineered/non-G.M.O., is raised on beet molasses instead of high-fructose corn syrup, said Cam Suárez-Bitár, marketing and public relations manager for Bellarise. Potential applications include croissants, hoagies, pullman loaves and rolls.

“The challenge for U.F.F.  doughs has always revolved around consistency,” he said. “Cream yeast and crumbled fresh yeast have a short shelf life, and their gassing power degrades rapidly over time. So more apt solutions are needed to get the most out of frozen doughs.”

Bellarise semi-dry yeast extends the shelf life of frozen dough by 6 to 12 months when compared to other yeasts, he said. The semi-dry yeast has a two-year shelf life and is easy to handle since defrosting is not necessary, he said. The yeast creates a uniform and symmetrical crumb structure.
