Burford Corp., a Middleby Bakery company, offers its redesigned enrober, which will be on display at the International Baking Industry Exposition (IBIE), held Sept. 7-11 in Las Vegas. The enrober improves outer coverage of dough pieces with dry toppings on high-speed automated bread lines. The compact design allows it to be integrated into existing lines, and the portable cantilever enrobing system can be quickly moved offline for product changeovers and tool-free sanitation.

Mitch Lindsey, technical sales, Burford, said the machine was designed for any bread manufacturer to produce topped bread products on an automated line. “Because most bakeries have limited space, we designed the compact enrober to fit into existing lines without the need to purchase a complete line,” he said.

The design reduces labor by eliminating manually rolling the dough in a tub of topping before placing it in a pan. “In addition to automating the enrobing process and providing consistent coverage with very little waste, this unit also incorporates features to prevent dough jams and alerts operators of damaged product,” Mr. Lindsey said.
