King Arthur’s Flour, Norwich, VT, introduces a line of gluten-free mixes that contain a proprietary blend of rice flour and tapioca starch. Depending on the variety, the mixes include contain varying amounts of brown rice flour or potato starch. They are available for muffins, bread, pizza crust, chocolate cake, pancakes, cookies and brownies, as well as an all-purpose flour mix. The 24-oz gluten-free flour blend retails for $7.95, and the other gluten-free mixes retail for $6.95.
