Prosoft Silver from Mallet & Co. functions as a crumb softener and shelf life extender for breads, buns, sweet doughs, danish, pizza doughs, raised donuts and other yeast-raised products. It works the same way in soft cookies. Used at 1 lb per 100 lb flour, this hydrated emulsifier contains distilled monoglycerides. They complex with starch to slow the normal retrogradation process responsible for staling.
