Reading Bakery streamlines filled pretzel stick production

The Pretzel Filled Stick Extrusion System from Reading Bakery Systems can dispense a variety of soft fillings such as cheese, peanut butter or chocolate. The system includes a Low Pressure Extruder and pump systems that combine raw batches of dough and dough filling into a specially shaped filled rope. The extruder forces dough into a compression head, where it flows around a nozzle that releases the filling. At the same time, a filling hopper discharges filling to a pump stand that meters the filling into the compression head on the extruder. Both the dough and the filling exit the compression head through a die plate that gives the co-extruded dough rope its exterior shape.
