A method for measuring acrylamide in food products uses wavelength emission data collected from the food for real-time quantitative analysis. Food products are tested offline in an analytical laboratory for levels of acrylamide precursors or acrylamide itself, and then the wavelength emission data are correlated with the offline laboratory data.
