The new S500 range of bread improvers from Puratos employs patent-pending enzyme technology to give superior dough tolerance, outstanding volume and improved fresh characteristics to bread. They can be used in crusty bread, rolls, loaf breads, whole meal, soft breads and sweet goods, as well as with a variety of processes such as retarded fermentation and short freezing. These improvers deliver standardized bread quality that is less dependent on flour composition. The range includes S500 Blue for automated lines and S500 Green for clean-label products, as well as S500 Red for volume and extreme tolerance and S500 Ultra, a multipurpose improver.
