Capable of thickening in cold liquids, the native, unmodified waxy corn pregel starches can be used in clean label, natural foods. The line also includes modified versions that are stable under heat, pH, shear and freeze-thaw conditions. The company notes that its pregel corn starches improve the texture of baked foods, especially gluten-free formulations.
