Crusto bread lines from Rademaker are designed for a wide range of products from pan bread to high-absorption artisan breads. The modular design guarantees flexibility and fast production changeovers. Compared with dedicated bread lines, this system yields a shorter return on investment. Crusto lines are a solution for medium- to large-scale bakeries. Modern artisan breads are typically higher in absorption, stickier and softer. While artisan processes have previously been deemed slow, Rademaker industrialized the Crusto to keep up with output speeds of up to 10,000 lb per hour. The line offers low-stress, gentle dough sheet forming, which requires less dusting flour while maintaining optimum dough characteristics. All belts have quick releases, and the line can be washed down if required. The line has full PLC control with automatic speed and height adjustments.
