FARGO, N.D. — A pilot run featuring crimson red corn from SK Food International shows the corn may work in new product applications, including cereal loops and puffs as well as extruded snack products. SK Food International, Fargo, partnered with the Northern Crops Institute, also based in Fargo, on the new applications.
SK Food International’s crimson red corn has a clear seed coat with the color in the alerone, which allows the red color to remain intact through processing. Thus, there is no need to add colorants or artificial additives. Other potential applications include extruded snacks, puffed and popped products, tortillas, cereal, personal care products, flours and meals.
