Bay State Milling creates its 100% whole grain ancient grains flour blend by combining amaranth, barley, millet, quinoa, rye and spelt. The flour is optimized for functionality and nutrition in applications that include breads, rolls, wraps, tortillas, flatbreads, pizza crusts, bars, snack foods and dry mixes. It has a light color and mild, ­complementary flavor. The flour analyzes as 8% fiber and 12% protein and provides 10% of the DV for potassium. All of the grains are also available individually in whole or special granulations.
