An ingredient with a nondigestible food film material reduces digestion of digestible carbohydrates within the small intestine. The undigested carbohydrates and the unabsorbed digestion products pass through the small intestines and into the colon, where they are fermented. The ingredient can be used to make reduced-digestible-carbohydrate foods containing viscosity-building components that contribute to the formation of viscous intestinal chyme that can inhibit or prevent digestion or absorption of the digestible carbohydrate in the small intestine.
