PenNovo FR from Penford Food Ingredients can replace up to half of solid fats in baked goods. The non-GMO replacer based on potato starch is cholesterol-free, reduces calories and cuts saturated fats. The company offers a formula for 25% reduced fat, gluten-free cake pops that also takes advantage of its Coyote Brand Stabilizer XA-0823 and MC-1217LV, which synergistically combine with the starch and help maintain volume and texture while also replacing up to 50% of eggs.
