Ardent Mills introduces Eagle Mills gluten-free, all-purpose, multigrain flour blend. It combines several ancient grain flours — amaranth, quinoa, millet, sorghum and teff — with brown rice, corn and tapioca flours plus corn starch. According to the company, bread made with this flour blend closely resembles mainstream bread in texture, color and consistency. The blend has other benefits. For example, two slices of bread containing this flour deliver 6 g of fiber.
