On the production floor at Doughnut Peddler’s newest plant
Two lines produce the company’s wide range of donuts, fritters, cinnamon rolls, twists and muffins.
Automating donut production
An automatic bowl lift transfers donut dough into the sheeting and makeup line.
Achieving consistency
The sheeting line reduces the dough sheet to a consistent thickness across the width. This can be automatically adjusted and tools can be changed out quickly to accommodate the various products Doughnut Peddler makes.
Incorporating ingredients
Torpedoes rolls cinnamon rolls into a consistently tight roll, which helps keep weights consistent.
Proofing donuts
Two donut proofers offer Doughnut Peddler automatic temperature and humidity control with flexibility to adjust to the many stock-keeping units produced each day.
Electric frying
An auto-load system ensures donuts enter the electric fryers in the proper position. Doughnut Peddler uses an electric fryer to ensure most of the heat enters the product.
Icing prep
Donuts cool on a conveyor to ambient temperature before being iced.
Topping off products
Doughnut Peddler still uses manual operation for some processes such as filling and icing donuts.
Embracing new technology
Tablets with a software system help track efficiency and product quality and streamline compliance across all of Doughnut Peddler’s bakeries.
Organizing orders
As production wraps up for the day, racks of finished product are arranged on the production floor to allow employees to pack custom orders for customers.
