SALEM, MASS. — Gillian’s Foods, a gluten-free bakery that delivers to retailers nationwide, has moved into a new facility at the Shetland Park area in Salem. At 20,000 square feet, the new facility has double the production space of the company’s previous facility in Lynn, Mass.
The company has installed an automated dessert line and has introduced several new products, including gluten-free mini cupcakes, said Nick Sideri, operations manager. The freezer has the capacity to hold more than 80 pallets, he said, and space has doubled for proofing, mixing and the dock area.
